Urrusolo presented his book “La cocina del monasterio.
Recetas para el cuerpo y el alma” under the
portico of the Santa María Cathedral, along with the Prior of the
Monastery of Guadalupe and the Abbot of the Monastery of San Pedro
Cardeña.
The book is the
result of a extensive tour around Spanish monasteries and their
kitchens, with a collection of 202 culinary proposals taken from abbeys
and convents. During the presentation monastic cooking and Gregorian
chants came together under the spectacular setting of the portico of
the Santa María Cathedral.
After this a meal was offered based on recipes from the book at the
Sagartoki restaurant, cooked by Chef Senén González and a friar cook.
The day ended in the afternoon with a free concert by the Gregorian
Chant Choir directed by Ismael Cuesta, interpreting the Corpus Christi
Mass.
The project for
the book began to take shape two years ago during the First Encounter
of Monastic Cooking celebrated in Vitoria, where 20 Spanish monasteries
exchanged recipes and experiences. The launch of this book places
Vitoria-Gasteiz and the Santa María Cathedral at the centre of cultural
life again.
